Green tomato chutney
The tomatoes that won't ripen before the cold get turned into chutney. This is roughly what I did, from memory and a recipe card with most of the measurements smudged.
1 kg green tomatoes, chopped. Two onions, one apple, a handful of raisins. 250 ml cider vinegar, 200 g brown sugar, a teaspoon of mustard seeds, some ginger, salt. Everything in the big pot, simmer for about two hours until it's thick and a spoon dragged across the bottom leaves a trail.
Into hot jars, lids on, and then the hard part, which is leaving it alone for a month. It gets much better with time.
